There is a method often used in waterfall photography where the camera is placed on a tripod to hold it completely still, and then the photo is taken with a very slow shutter speed. The result is a striking photo that blurs the flow of the water and seems to capture the motion. The links here show photographs taken with this method. In my pictures, I prefer a fast shutter speed so I can capture individual drops of water and the light reflected in the water unblurred. I think that captures a more realistic view of what the human eye sees at the actual site.
